- is one of the Filipino recipes that i usually cooked for my family.They are very fond of eating food recipes that contain a little of meat and a lot of vegetables.It's very delicious especially if its not over cooked, vegetables need not to overcooked inorder to preserve crispiness and yumminess.My daughter are sometime picky when it comes to vegetables but when i started cooking pinakbet, she love the taste and appreciated it no matter how it was prepared and cooked.
Ingredients:
• 1/2 lb. pork, sliced
• 2 tbsp. oil
• 3 cloves garlic, minced
• 1 small size onion, chopped
• 2 tomatoes, chopped
• 1/2 squash, cubed
• 2 cups okra sliced
• 2 cups sitaw 1-1/2 inch long cut (yard long beans)
• 2 eggplants, sliced
• 1 ampalaya (bitter gour),sliced
• 1 to 1-1/2 cup water
• 2 to 3 tbsp. bagoong alamang (salted shrimp paste)
Cooking Procedures:
1. In a large, deep pan or casserole, heat oil in a medium heat. Cook pork until I turns slightly brown.
2. Stir in minced garlic, onions and tomatoes. Saute for a few minutes.
3. Add Squash and Okra, Stir fry for a minute or 2 and then add the rest of the vegetables. Gently stir to combine those vegetables.
4. Pour water followed by alamang.
5. Lower the heat and simmer covered until vegetables are tender. Be sure not to overcook it. If you wish to correct the taste you may add alamang. Gently Stir to blend.
6. Immediately remove from heat.Transfer to a serving dish and serve while hot.
